Blade started his culinary journey at his grandmother's feet in Houston, learning to cook her excellent food!

After high school in Houston, Blade worked to pay for his college education in Los Angeles. Upon graduation, he continued to work in the business, both in front and back of the house, ultimately deciding his love of restaurants needed to be actualized. During this period Blade opened expansion operations for Spago's, Border Grill, and Mezzaluna in emerging food markets such as Los Angeles, Las Vegas, Aspen, and Ft. Worth. Blade subsequently worked in multiple operations as a consultant and Director of Operations for independent restaurants and large restaurant groups culminating in the national award-winning BPC Steakhouse. After meeting and falling in love with his wife Jennifer, the decision to start a family and be closer to Jennifer’s family prompted Blade to relocate his career from DFW to San Antonio.

Most recently Blade served as Operating Partner with the Lasco Group, with local and multiple state responsibilities, including opening Max’s Wine Dive (San Antonio, Dallas, Ft. Worth, Atlanta, Denver, Chicago) and Boiler House in the Pearl in San Antonio. Responsibilities included Construction Project Manager, District Operations Operating Partner, and Culinary Director for five concepts with 11 multistate locations. After losing a parent and his son’s quickly approaching fifth birthday, Blade decided to opt out of his Operating Partnership and spend some quality family time, with the dream of starting his own restaurant group.
